In an attempt to try to see exactly where I could fit in more greens and veggies in my meals, an essential meal of the day stood out. Breakfast. Breakfast is often an overlooked meal in terms of trying to get in more veggies and greens without having to resort to eating a salad for breakfast. This Vegan Breakfast hash solves that dilemma and will leave you super satisfied!
Breakfast hashes are one of my favorite morning meals. This one is particularly filling from the potatoes and vegan sausage. I am also one who prefers to eat kale steamed or sautéed, I prefer the flavor that way which made adding kale to this recipe kind of a no-brainer.
You can use your favorite vegan breakfast sausage. There are so many delicious options to choose from now. I recommend trying to find a breakfast sausage with maple flavoring. The sweetness from the vegan maple breakfast sausage in addition to the sweet onions is just fantastic.
This filling breakfast hash is excellent as a stand-alone meal for breakfast and it is also great as a breakfast side that can be served with your favorite vegan egg or tofu scramble for some additional protein.

Vegan Kale and Sausage Breakfast Hash
Ingredients
- 6-8 Cups Kale (I prefer pre-bagged kale as it is one less thing I have to chop)
- 1 Medium Onion Chopped (Should equal about 1 heaping cup)
- 3 Cups Red Potato Chopped
- 1 tbsp Coconut Sugar
- 2 tbsp Vegan Butter
- Vegan Breakfast Sausage of Choice (maple flavor preferred)
Instructions
- Wash kale, and remove stems and chop if not using pre bagged kale. Set aside.
- Wash potatoes and peel if preferred.
- Chop potato and onion.
- Melt vegan butter in a pan and add onion.
- Sauté onion on medium heat for 5 minutes.
- When onion begins to turn translucent lower heat and add coconut sugar. The process from here is low and slow.
- Sauté for about 10-15 minutes allowing the sugars to caramelize.
- Toss the potato you set aside earlier in the tbsp of olive oil.
- Air fry your chopped potatoes at 350℉ for 15 minutes and season with salt and pepper to taste. If you do not have an air fryer you can bake potatoes in the oven on a baking sheet at 350℉ for 20 minutes.
- While onions are sautéing cook vegan breakfast sausage according to package instructions. I oven pan sear my breakfast sausage.
- When onions are caramelized add in the kale and cover pot to allow to steam and slightly wilt the kale.
- When the kale is wilted add the potatoes and vegan breakfast sausage and stir to evenly combine. Sprinkle with a bit of salt to taste.
- Serve warm as a side with your breakfast or as a main!
