Vegan Chocolate-Covered Strawberry Oatmeal

Ingredients

  • 1 Cup Oats
  • 2 Cups Unsweetened Plant Milk of Choice (I use soy or almond milk)
  • 2 tbsp Unsweetened Cocoa Powder
  • 2 tbsp Maple Syrup (or sweetener of choice)
  • Strawberries
  • Vegan Chocolate Chips
  • Vegan Strawberry or Vanilla Yogurt (for topping)

Instructions

  • Wash your strawberries and cut in half lengthwise.
  • In a microwave safe dish add chocolate chips and microwave on 10 second intervals until melted. Add 1 tsp of plant milk as the chocolate chips melt for a smooth consistency.
  • Dip the strawberry halves in the melted chocolate until well coated.
  • Place chocolate covered strawberries on a plate or tray lined with parchment paper and chill in the refrigerator for 15 minutes while you begin to prepare your oats.
  • Note: Using the parchment paper makes it easier to remove the strawberries from the tray so nothing sticks.
  • In a pot add plant milk, cocoa powder, and maple syrup and mix well.
  • Allow to come to a low simmer, and add oats. Continue to simmer until cooked.
  • Oats will have a thick, almost pudding-like consistency. If you like your oats a little runnier add more plant milk.
  • Add your cooked oatmeal to a bowl and allow to cool slightly. Drizzle with vegan strawberry yogurt, and top with your chocolate covered strawberries and some vegan chocolate chips.
